Trying to surprise me old man and have him drive around in a first Gen Rx-7 for fathers day. The first car he got when he came to the states. If any one has a yellow Rx-7 in close to good condition. hit me up i would love to rent it for the day and just create or bring back a dope memory. for mt pops it has to be stick too. If anyone is from the boroughs of Brooklyn, Queens, The Bronx or Staten Island or manhattan shoot me a text 347- 860 - 5100

Other then trying Turo or other type of car rental places, I don't know anyone willing to turn the keys over to a stranger or someone with only one post. Good luck. I'll rent mine for $10,000 and you can keep it when you're done.
On a serious note, you might try a track day. Sometimes they will have cars, RX-7, to rent for a few laps.

There maybe some rotor heads in NY that get together at some point. Check the NE section and see if anyone in NY is doing anything on fathers day. Also try posting this request there. Nice idea but I would just go for getting him to an event to see a lot of RX7s. As others said, its a pretty big ask to let a stranger drive your car.

This is a familiar story.
However yellow SA's in good condition are hard to find, much less borrow.
You may need to do what Paul did to get a yellow SA for his dad.
Buy one. (Disclosure: It wasn't cheap).
Here's Paul's thread and lots of pretty pictures of the yellow SA and the day he surprised his dad with it:
