85 SE Weird "2 step" Rev past 3,000 RPM

Hey guys, so I'm at a loss. This is my first time posting not my first time using the threads too help out a problem.

I am not new to the rotary world, long story short this is my 3rd 85 GSL-SE, and I have never came across this issue before.

Back on July 1st I had picked up a great little find in Hamptons "Oshawa" ontario Canada, had a few miner issues that were resolved by properly tuning the TPS and idle air screw ect. Problem is now not the TPS but something else, just a bit of back ground information I had changed out

Sparkplugs
All oils and filters "easy access ones"
Tokico blue struts/shocks
Racing beat Springs all 4
Racing beat header
Cat delete
New muffler "sounds nice"

Also swapped the AFM and TPS for one's I know work as Dave from MAZDES had replace on my other SE. Car had been running fine till about 2 nights ago, yesterday I finally got to take the beast out for a drive and found it was bogging down/ sputtering or "2step" at 3,500rpm were it would hurky jurk and sound like it was working over time not in "harmony" so I whipped the car back to my driveway where I did a lot of research and found nothing, so I swapped back the old TPS still no change. I'm actually at a complete lose, it sounds like the person driving is raving the engine up and down really fast. Any one can help that would be great. I do have a video of what it's doing so if you would like a copy just email me for a copy as I don't know how to post on here really.
