It's a little extra work. The main things that stop people are that
A) it's a luxury in a performance car. You did all that work and your car is running well, nobody wants to add downtime for something that's not really a necessity.
and B) It takes custom work. To my knowledge, there's still no bolt-on AC kit, so you have to get lines custom-made (and then filled) at an A/C-certified shop. This just makes for a little extra headache for the luxury.
Personally, I'm doing a full A/C delete, and I won't be looking back. I have power windows and vents, and even if it were a daily driver, that would be plenty.
