rolling the fenders????
What exactly is rolling the fenders? I have heard that if you go with wider wheels/tires then you need to roll the fenders.

Look at the wheel well opening of the fenders. Part of the fender goes in towards the car at a ~90 degree angle to the fender. Rolling the fenders is simply bending this metal flap up against the inside of the fender. It will likely damage the paint at the wheel well.
You don't need to roll the fenders to run wide wheels and tires if you select proper wheel offsets and tire sizes. Max Cooper runs 18x10" wheels at all 4 corners with 285/30 tires. He runs 2-1/2" diameter coil-overs with a slightly lowered ride height and gets NO rubbing. His wheel offsets are ~50 mm. (All of this info is on his web page, hope I got everything right Max.)

I suggest you do the following:
1) Fix your fenders - you probably will keep rubbing with the lip bent down like that. May as well try to roll them while you are at it. Be careful not to crack the paint if you do it yourself.
2) Check for worn bumpstops - sometimes these are toast and need to be replaced. In some cases they will stop you from hitting your fenders, but this depends on many things like tire width/height, offset, etc.
