I assume you mean .25 inches?

You do not need to put the car on corner scales just to get it close. Unless you are heavy into competition it probably is not worth the time, effort, or cost to corner weight the car.

What is more important is a good alignment.

If you just want the height adjusted you can do it with a measuring tape. You measure a baseline height before you install them. Measure from the top of the fender opening to the center of the wheel. After you install them do the same measurements and adjust it to the desired height.

Any QUALITY suspension/performance shop should be able to corner-weight your car during the full alignment for a reasonable increase in cost.

Something to consider when using GC is that you're not using a threaded body shock.

When a car is lowered via a GC suspension, the shock travel is also reduced, since
the shock perch is what is actually being adjusted

This doesn't happen with a threaded body shock, where the shock perch does not change.

I have GC on my FD, and didn't like it at 25 inches. I've since put it back up to 25.5 or 26 inches. This car gets used on some bumpy autox sites - 25 inches was just too low with GC.

It's recommended, but probably 90% of the people on coilovers never do so it won't be too big of a deal if you don't.

Only if you want your car to handle well. The smallest of changes in the cross weight of a car will really change how it handles.

Some shops only charge around 100 dollars or so to adjust corner weights.

Like people have said it's up to you, but the reviews after are like night and day.

So the "correct" process is - ?
1) install and adjust ride height
2) corner weight and fine tune the ride heights
3) get a 4 wheel allignment

Yes, a shop will do 2 and then 3.

If you drive an FC, it's a good idea to buy & install a rear camber kit before aligning the car. I put my coilovers on and then wasted money on an alignment because he couldn't get the rears into specs.
$136 well spent.
