I've searched with mixed results about what size tires will fit without rubbing and am sure someone has done this before.
The wheels will fit with 0.16" clearence to stock fenders according to the excel data sheet however I am wanting to fit a 255/40/18 without rubbing.
Ride height will be ~25" front, ground to fender lip. I will also roll the fenders if needed.
Wheels are old school Work Equip, 18x8.5 +36 front and 18x9.5 +45 rear.

That will work fine. I ran my TIIs 255/40 on 17x8.5 +30 and 275/40 on 17x9.5 +40 on my FD and it barely caught the stock front fender lip on really hard Auto-X.
If you have some negative camber it will be fine without a roll and if not it will need a little roll if raced.

Anyone else run these offset's with 255's in front? In correcting my original post, they will be 255/35/18.

Fikse is known for their conservative sizing, and I ran 17x8.5 +38 up front for years with zero problems. I usually rocked a 245/40 in front but did briefly run 255/40 RA1s with no problem, this included some hard stints through the Dragon with many sharps turns at the bottom of small hills etc.
For 18" diameters 8.5" might be recommended by some manufacturers as the min rec, but 9" is ideal as Miata MX5 mentioned.
With that said you can do 255/35/18 and 275/35/18 or
Just go with the standard setup on those widths:
235/40 and 265/35
That's what i would do.
This is considering you can do some minor fender tab liner bending up front. Rear is no problem.
