I've been looking at a set of 18" Mille Miglia evos. I dunno if you guys get them in the states, but the widest they come is 9", and the narrowest (I think) is 7.5"

What widths would be the best, and then what offsets and tyres would you recommend?

Depends on the width and relative offset. You want at least a 8" up front with +40 or higher. The 9" is the same.
