before illegal street racing was such a big deal in san diego, I saw a CHP officer race his mustang 5.0 pursuit vehicle ( he won). An empty city bus raced (he lost). One of the fastest cars around, a supercharged C4 was owned and streetraced by a sherif deputy.

There are other videos of cops street racing in their cruisers floating around too. Hell I've seen the Chicago cops participating in races too.
