This would be impossible as
1: The ECU doesn't use fuel maps
2: The PDA doesn't store any information other than "saved maps" and even then its not a fuel map, its a correction map, so "stock" would be all zero (no correction).
3: The in-use fuel correction table and timing tables are stored in the ECU not the Palm.
4: The stock confguration is built into the ECU so there's nothing to lose.
You may want to read the "ECU Reset" section of the manual, or give us more detail as to what happened/what you're looking for.
