What is the story behind the car? Rebuild, sitting a long time? It could be oil control rings or oil getting into the turbo or ?

Check your antifreeze coolant level - see if it is using coolant

Ooops, he said white didn't he My bad. Definately coolant. You may also see water dripping out the exhaust if it is coming out that thick.

Could also be oil...
Most likely it's oil.
Can you smell the smoke?
Burning oil burns your eyes and nose.
Burning coolant will smell sweet and not burn your eyes and nose.

Most the time they smoke it is oil but if it is white as he says then it's water. But I guess one man's gray is another man's white

I "blew" my motor when my oil pressure regulator fell out of the front cover.
Yes, I torqued it via torque spec in the Mazda FSM with a Snap-On torque wrench.
The lower oil pressure burned all the oil control o-rings.
It was burning tons of oil.
Trust me, the smoke was ghost white.
It was billowing like a James Bond smoke screen.
It was like ATF, but thicker like clouds.
It burned your eyes - this was the only way I could tell it was oil.
