u sure its not normal condensation from it being winter out?? exessive white smoke would be an indication of a bad coolent seal if its eating coolent.

White Smoke = New Pope elected?

White smoke is either coolant or oil. Coolant usually has a sweet smell to it. Oil smoke will be typically be tinged blue. When the engine is cold, try taking off the radiator cap and starting the car. You may see a lot of bubbles, indicating a coolant o-ring leak. You can also have your coolant tested for combustion gasses.

A recent rebuild does not guarantee a long engine life. If careful checks were not made, the engine could have been put together with either warped side housings or heat-shrunk rotor housings. You can watch videos about the inspection process of these parts on RebuildingRotaryEngines.com. As discussed in the rotor housing inspection video, the rotor housings tend to shrink around the exhaust port area (hottest spot) and if you re-use rotor housings, it is critical to measure for shrinkage. A lot of people assume that what looks good is good, but that's not always the case.

Oh yeah, if you _just_ got it running after a long time sitting, it could just be oil and/or coolant in your exhaust that hasn't yet burned off. It can sometimes take an hour or more of running to clear it out completely.
