That is a great NOOB post, if you want information like that you need to provide information
Ok we know it is a FC but there is/are two types S4/S5 then you have Turbo/NA, what type of mods do you want.
You will not go far unless you provide as much information as you can when you post something on here.

Make sure you know what your doing before you go modifying anything. And always do maintenance, tune up and reliability mods first. Get the car running good, or mods will likely make it worse.
That said, here are a few places to get stuff:
http://www.rx7.com/
http://www.racingbeat.com/
http://www.mazdatrix.com/ (mostly OEM parts but some aftermarket stuff, too.)
Good luck. Since you're new, post a pic or two of your car. We like pics.

I don't wanna burst your bubble but no amount of bolt-ons will net you 380rwhp, you will have to go boost. This isn't a 350 chevy where you can buy a intake and a set of headers and go. The handling should be easy to achieve tho.

380 to the wheels can be achieved by a moderate turbo upgrade (GT35R is one of the best turbos for stock and street ported 13Bs, use the biggest T3 hotside you can find or a T4 .89). Of course you should probably start with the TII engine and you should have the TII drivetrain as well. It will require a standalone and a full fuel system upgrade, front mount, etc. etc. etc.
A good set of shocks and springs will make a huge difference in how the car handles, and replace all the 20+ year old bushings and joints. It really doesn't take much to make these cars handle like no other but as I have not driven a 2003 911 I can't compare.

there are alot of threads on adding a turbo to a NA motor/rx with lots of pics and good info, there is more then one way to turbo a NA motor/rx, you can make it as difficult/detailed as you want to, and its all about how comfortable you are about doing the majority of work yourself

And how much money are you willing to spend ? It's not that easy to make 380 reliable HP out of old n/a car. It could be done if you got mechanical skills and you can do it much cheaper, if you ain't got that, then you gonna have to pay someone big $ to do it for you. What do you have so far done to your car? Is the engine old stock? If it is it is ain't going to hold the turbo. It involves a lot of **** and that including electrical. I don't know, a fun car not always means big HP.
A lot of **** involves to have your old rx to be near with your friends 03 911 turbo. But if you aiming that direction and you like second gens. I'd start with a factory turbo rx, and, the newer the better. Trust me I've done turbo conversion and I would never do it again. Anyway turbo, non turbo, for performance you'll need a good ECU, that will make you HP, it's a very good start, you change your pipes or intake you need to tune your ECU. If you going with turbo DON'T buy Chinese kits, get a good heavy manifold and good expensive turbo, once you get everything it's gonna cost you just as much as in good shape turbo II rx , that already have everything and with better exhaust and intake, and more boost , it could make you easy 250+ to the rear wheels which would be more fun than trying to slap the turbo on to the n/a. But it is up to you, I just want you to see the picture of what it takes to do what you want to do! Well good luck

However, for most people it is far better to do a standard TII swap.
See the 2nd gen FAQ for details on both approaches.

Throttle response depends entirely on the tune. In stock tune, both engines don't have that instant throttle response you are probably looking for because of an old ECU and probably worn out sensors/injectors. With a well tuned standalone throttle response is instant.
