RX-7s were produced from 1978 until 2002. You'll need to be more specific.
Generally you will just need to look at the FAQ sticky that matches the year of your car and then check it for links to the factory service manual. In this manual, you will find your diagrams.

What year and which harness? I'm assuming it needs the engine harness.
Anyway, a good source of info is here:

Download the FSM and whatever wiring diagrams for the year of the car. You should be good from there.
If doing say the engine harness, take several pics of how the old harness routes (or make some kind of notes) before taking it out. Then carefully disconnect each connector one-by-one (they can be brittle due to heat/age) until everything is disconnected. Route the new harness the same way and re-connect everything. As long as the harness is routed the correct way, there is little chance of screwing anything up. The connectors used make it so you can't really plug things into the wrong spot. If you are unsure on a couple connectors, you can consult the wiring diagrams for information (they show what the connectors look like and what color the wires attached to the connectors are).
Hope that helps.
