welcome to the board.
i'm not 100% sure what you're asking, so let me see if i have that straight first.
you have a bridge ported 12A with a Holley 750 that's not working, and you want to know what to replace it with? is that it?
1. why not try to get a smaller Holley (since you already have the manifold and all)? i would have said why not try to fix the one you have, but i'm not sure it's sized correctly for your setup.
2. if you simply don't want to deal with a Holley any more, then i would say go with a Weber IDA. it is my opinion that the Dell'Orto is probably not going to be a good fit for you (unless maybe you can get your hands on an old side-draft manifold, like Lake Cities or something). also, the Weber has way more support, which you will obviously need when you start trying to tune it.

83 rx7
Hey I was wondering why on every single 83 rx7 i come across with hopes to restore it, they all need a carburetor. Why is it that I only see the 83 rx7s with carb problems. And if i decide to buy one and replace the carb, is it a common occurence for them to need replacing?

excellent point!
that said, i'm sure there will be people that will say they run 750s, no problem. however, of the handful of people that i actually knew that tried them, none of them ended well.
welcome to the board to you, too.
as with any mechanical parts on 30+ year old cars, they will require attention. some people are capable (or have available resources) to repair, some people decide to replace. i don't know of '83s being any more prone to that than any other year of the Gen 1 cars.
