new and have problems!

Hi my name is andy and i just bought a 1989 rx7 that has a s4 swap. My problem is, the temp will go up (not to the H but gets close) then out of now where it will drop to about the middle which i think is normal? second problem is, when i go to check the coolant (car off) i turn the cap half way and coolant come shooting out so i close it right away.... any ideas? the "add coolant light goes on and off randomly too???

Do you wait until the car is cool before checking? If warm that's normal. How much is in the overflow? As far as temperature, it sounds like your thermostat could be opening late, try getting a cooler one perhaps? What color is your coolant? If it's all cruddy you might want to do a flush as preventative maintenance.

I do wait till is cooled down to check it, the overflow is full (way pased the full line almost to the top of the tank). where might i find a cooler thermostat? Autozone or o'reileys maybe? and what temp should it open at? as far as coolant color, it is a nice green color and looks new, nothing floating in it.
