Welcome fellow arizonian.
I'm in Phoenix and see quite a few 1st & 2nd gens, but rarely see any 3rd gens. On this site in particular, there are some, but I have no idea how many. I've wondered if you can get that info somewhere. There is a classified forum called West Classified Forum. And there is another site: www.azrx7.com but not nearly as good as this one.

hey welcome aboard. There are PLENTY of RX-7s here. I see a fair blend of all gens and meet up with a few guys every now and then. There is a far better regional website for Mazda's in AZ: http://www.azmazdaclub.com/
These guys organize runs and meets regularly. 91st ave and Northern in Glendale is a great meet on Friday nights. 101 and Indian Bend in Scottsdale is great for Saturday nights.
One great thing about AZ, there are plenty of rotary shops around town, and lots of knowledgeable guys.

Welcome
AZMazdaClub is great, but if you want to be around rotarys try RCCAZ, Rotary Car Club of AZ. You can find the event thread at RX8Club west regional area. We meet every month during the cooler time and typically do a Tortilla Flats run.
