Looking for interior pieces...
I'm looking into geting need pieces for the interior like the door hanbles/plastic trim with pocket and the center console where the shifter is. I would like to keep it stock but I'm not going to get picky if I see something that I like.

If I remember correctly, Mazda charges a hefty price tag on those interior pieces (as they do with everything else). You can call Ray at Malloy Mazda: 1-888-533-3400 and get a quote for them. Heck, it's a toll free number.
If you are missing the ashtray (that goes into the center/shifter panel), you can order the "Ashtray Armrest" as a replacement (which is what I would do):

If you haven't seen one, it has a pad on the top for you to rest your arm on.
