Just don't wear seat belts and leave the windows down so you are safely ejected in case of a roll over.
Seriously, there are several production cars with fixed seats, some with no roof.

I see this more as a problem when you are tracking and there is a relatively high probability of roll-over from gravel traps. A helmet and roll bar would be a good idea on the track.

. So adding a roll bar would further complicate things in the back seat as well. I'm aware there is no perfect solution for me, just getting as much info as possible for a solution in the future.

heres my corbeau pro carbon kevlar. love um. have them VERY VERY low in the car so my head dont hit the cage. 
only have one in at the monet as during the summer it was a time attack car. but for the winter ill put the other one in so i can have friends again
