im 6'0 and have never had a problem with wearing my helmet
they also have lots of side clearance if you ever wanted to put a cage in

I have a Sparco Pro 2000 and like it allot.
As far as installing the seat, i had to use the Sparco side mounts and fab up some mounting plates to get the seat to the proper height (almost on the floor) which i’m sure you will have to do as well.....not a hard task at all. With that being said i’m sure you can get a bolt in seat as well, just remember your helmet will add a few inches
By the way riding in your car with the stock seats was no easy task

Whatever you do don't get a seat with the internal tube metal frame. Not nearly as comfortable and doesn't allow for as much feedback from the car. Also with your main purpose being lapping events or TA you'll be in and out of the car often when using it and a formed seat will last longer and wear better.

I ran the Sparco Speed last year, it's a tube frame seat. Actually I found that the seat was incredibly comfortable because it actually hung you in between the steel tubes, took a road trip to michigan last year and the seat felt amazing.
That being said, you're probably right about the feedback. I ultimately ditched the seat for an OMP seat that is a formed fiberglass seat because I want to run a 6pt harness but the speed only takes a 4 point.
In terms of helmet height, the sparco speed actually gave me much more headroom because my *** actually hung below the 4 mounting bolts (its a bottom mount). The OMP sits me probably 1" higher
The sparco was also smaller and easier to fit in my puny FD cockpit
