wich way does the thermostat face?

The wax pellet and the spring face the water coming from the engine in order to respond to coolant temperature. If it were backward, I would expect some overheating symptoms, since it couldn't sense the coolant temp until hot water got to the pellet due to leakage or flow past the thermostat, and that would be an unstable situation, similar (but I would expect, worse) to what you described.

When it opens, it closes off a bypass channel in the motor.
This channel is used to circulate coolant while through the engine while the tstat is closed.
If it were backwards, it could not close the channel, and your motor would overheat.
