I use just your basic Autometer "Sport Comp" 2-1/16 diameter guage, black face.

Only mine is metric (Celcius markings) because I live in Australia and we dont use or understand Farenheight :p

But a Farenheight version of that gauge is available easily also.

any electric gauge will be fine. having a peak/recall function is a nice feature.

just make sure when you install it, you install it properly. look in the big fat fd3s cooling thread

At 230 degrees your engine is overheating, so a gauge that goes to 250 degrees will be fine.

Two useful one are water and oil temp, mine are 0-260F water and 0-300F oil.

I likes gauges with warning feature. PLX is very flexible.

Boost and water temp are the bare minimum I would go with.

Oil temp, and oil pressure would be later additions, but maybe not as crucial for use in diagnosis.

Oil pressure is rarely an issue, but some of these cars are getting old and very high mileage now. Cases of bearing failure are sort of starting to filter in to the forum slowly. My educated guess is that the high mileage cars are the ones that are starting to suffer bearing wear and oil pressure issues, if any.
