thernostat at 78c ? and cooling system question

hi,
i removed the tstat housing to check and found that there is a thermostat at 78celcius.
can i keap it or replace it with a higher temp and for witch temp?

also about a year ago i saw noticed that the water in the cooling was disapearing and every day i must add parhaps 50ml.the guy at the shop suggested to add some kind of liquid in the cooling system (about 200ml) to fix the problem.
i could not see any leak and we assumed that it was from a faulty cooling oring in some housiing.
also he removed the gearbox and tightened the engine bolts that holds the housinghs and plates together.
from then sinse now the leak stoped and the problem fixed .i thought a good idea to ask you guys your opinion. do i need to flush the cooling system to remove any residue from that crup?is it a problem to kkep it in the radiator?
when i open the tstat housing i noticed a gell here and there.not to much , but i am worring for the waterpump.do i need to remove the pump and check it?

this liquid has some small particles in it and suposed to be for cooling systems leakage.
