Steering Wheel issue

Details:

1992 RHD FD

Aftermarket Mazdaspeed steering wheel.

Over the winter, while the car was in storage I had to remove the steering wheel to replace the turn signal / wiper control arms. When I put the wheel back on, I definitely got it off centre (which I didn't notice until I took the car out of storage and went for a drive). After a bit of fiddling I re-centered the wheel (took it off, rotated, re-installed).

The issue I'm having now is that it seems almost every day now the wheel will be off centre on a whim.

Yesterday I woke up and the wheel was angled more to the right of centre. Today it was left of centre (a noticeable amount each way).

The other day it was in a more left-of-centre mood but by the time I'd driven for about an hour it felt pretty close to bang-on centre.

What would cause my wheel to arbitrarily be off centre to different sides seemingly on a whim?
