I've had my RX7 sitting in my garage for two years. I took it to the dealer and they said I had a bad fuel pump and wanted $700. Took my car back, and long story short it wasn't the fuel pump but a burnt connector that attaches to the fuel pump. The car is ready to go back on the road. I want to drain the fuel tank. so looking for suggestions on the best way to do that. Also any other suggestions before I put it back on the road.

 

should be a drain plug on the tank, just remove that and let it drain. i would just start by verifying everything is ready for the road such as oil,coolant,tires,belts,etc...

 

Fresh fluids all around! Check as above, including rubber things (hoses, etc) that could get hard and / or rot.

 

Check for fuel leaks. The FPD tends to leak after sitting for a while, because its rubber and crusts over. I just had to replace mine.
