Running new ground wires....

If I run a new ground wire from the alternator to the chassis, I can just leave the old ground capped, right? I don't like the idea of trying to trace it back and yank it out!

Also, there's a ground on the engine block below the spark plugs, correct? I see a black wire with an orange stripe down there, and I'm pretty sure that's a ground, too. Just want to make sure before I disconnect it to run a new one and find out it's something else!

Yeah there is a ground on the block below the spark plugs. You can reach is easily from under the car.
