Rear iron coolant port

I know the tutorials on plugging the rear iron coolant nipple tells us to use JB putty and then some JB weld in a vacuum cap to seal it off, but theres a few coolant nipples on the water pump that arent being used anymore
Could I just put a coolant hose from the rear iron to the water pump? or would that disrupt the coolant flow and cause problems?

You are better off running the coolant line then using JB weld. When we want to eliminate the nipple we remove, tap and plug it.

Any specific water pump nipple I should use or will they all yield the same results?

you can route it from the rear iron to the waterpump (loop it essentially). I have done that before with no problems.

Use the one on the top of the WP housing that points straight back toward the rear plate.
