Quick aftermarket temp gauge question

The sensor is hooked up right next to the coolant filler cap. When driving today and when I parked, it hit 225 F, but how come when I shut down the engine and turned the car back on to where only the electrical components work, did the guage read 200 F?

my guess would be the sender is only in contact with air when the car is shut down.
