Question regarding engine temp

I just purchased a third gen that had some of the standard upgrades already done. I'm told that if the engine overheats once, it is all over. Luckly there is only 17K on the new engine. The previous owner installed a boost guage and digital temperature gauge. Needless to say, I am a little paranoid of the engine overheating. Currently the average temperature ranges between 215-225, occasionally reaching 230 or so. At what temperature is considered overheating and time to pull over immediately?

Also, the previous owner installed the Home Depot turbo valves and did his best to quickly try to adjust it before selling it to me but wasn't satified with the results. Currently max boost is 10psi and it will dip to 5psi during transition, what is optimal if I try to adjust it myself? Also what is considered a dangerous level?
