I would do a nice 2 rotor. It would have a custom supercharger, probably 15-20 psi. Fully tuned ecu, and of course all the extras. That would be my street car.
Track car would be a 911GT2, of course.

i would buy one of those pettit banzai editions, and have someone custom make it into a widebody (that would look similar to the mazdaspeed except wider). with unlimited money i would prefer that other people do the work, hehe. i would keep my current, almost stock, fd for a daily driver.
I would quit my job and dedicate myself to cars. I would start by getting my hands on the original Mazda design program for the FD (what ever CAD-type of program it could be) and begin updating the mono-cocque (spell?) frame of the car to be much stiffer and made entirely of carbon fiber, and some sort of super-alloy. Then the design would be altered further to incorporate a widebody profile. the suspension geometry would be altered to create a wider footprint to fill out the wide body. 19s all around. 3 rotor engine with twin GT35/40 turbos. Traction control derived from F1, and a semi-automatic transmission derived from the new Ferrari 360 Modena Stradale, with the race option that automatically blips the throttle to match the gear you select. Lambo doors. Liquid-cooled intercooler, probably in a V-mount design. Am I forgetting something?.....
A renesis swap for it's benefits w/ a bit of mods to the car for more power. I'd redo my interior pieces for a more comfortable touch/feel, a nice redone paint job (along with 99 conversion bumper/spoiler, sleepy HID headlights, scissor door conversion and full carbon fiber body panels), completely flat underbody, bigger wheels and tires, and a well working GPS system. A full lifetime warranty, some money left over for little things I missed, and random fines I may pick up as well won't hurt.
And to get really extreme, I'd like a button that I can push, that would make my car fold up, so I can put it in my pocket like the Jetsons.

Innocent blue mica, 99' front end and tails, Feed hood ,Feed wing, 20B spooling a T78 or T88, 6 Speed Tranny, everything polished under the hood, Suspension and brake upgrades, a nice cd player, nice speakers. Maybe a HUD boost gauge, and just for the sake of being differnt a targa top would be pretty damn cool.

RX-7 do a 1st class restoration, 350+ hp, modding to keep it streetable/daily driveable. Keep it stock looking. I like the steath look...
RX-7 needs to retain it's sports car poise. Love twisties. I would get something else for a drag car...

I would love to see a lifted 7. The concept would be so reversed it would be hilarious. Might as well put a dual exhaust on the fd as well since you have the money (still waiting to see).
