how hot is too hot

okay here is the deal. my AC was not working up until today. i recharged it, blah blah. now i cant just drive around town with the AC on just to keep the car cool. im well aware of pulling the relay and hooking up the fan mod, but i will have a fix once the power fc arrives, soon i hope. i want to know how hot our engines are to run on average. what is the hottest it should get before i should be worried. as of right now i have the pettit AST and a koyo radiator. around town(only can say of tonight where its about 80 outside, not during the day when its 100's) i was running close to 210-214F. freeway is around 175-190. with the fans on the temp around town would be about 190-195F. freeway just as cool as it usually is. what is ideal, what is SCARY. oh yes, i have a defi water temp gauge to monitor the temp, and it has been placed below the stock sensor in the outlet. any and all feedback welcome.

I would say to get worried at 210 degrees F. turn your fans on and try to keep it below 200 degrees F.

The stock system wasn't designed to kick the fans on until around 221F, so those temps are fine.

You want to get another gauge because when the stock one gets to red your already pushing the car.

and those temps are fine, but its good to keep the park lights on because that keeps the fans on, but I only do that during autox's and driving on the high/freeway.
