how do you read turbo lag on a dyno graph

I have heard that you can tell how much lag a turbo has by a looking at that cars particular dyno sheet, but how?

A good indicator is how long it takes for the turbo to start making good boost. Look at the dyno charts on this page:

You'll see that the twins or small singles have much better low end than the big singles. However, this isn't a perfect indicator for how a turbo will react, if say, you are already at 4000 rpm and nail the throttle. The dyno won't provide that info.

That's a pretty sweet site. A nice indicator of what you may be able to do with what mods.
