How to Change Idle revs

After the engine fully warms up, idle revs are jumping up and down 200-800. I've been told its the cold that confuses o2 sensor because its currently winter. I bought my car in October so I've never driven it in warm climates to know if this is true. It happens when the car is stuck in really bad traffic but now its happening when i warm it up since its stored in the garage.
The car stalled for the very first time on me after 20 minute warmup on a really cold day.

Car mods:
rebuilt engine with street port and 3mm apex seals
upgraded Bully clutch
Walbro 255lph fuel pump
dual filter K&N intake with heat sheild
3'' down pipe and 3'' cat back exhaust
Pettit ecu
H&R sport springs
Hawk hp plus brake pads
Apex-i turbo timer
Autometer boost gauge

my engine did that when it was blown..
It's normal for revs to go up and down though and there's no real way of fixing it. If you know what you're doing you can use a paper clip to adjust it up or down but you'll still have revs jumping up and down.
The aircon can also make this worse...

As for the A/C, turning on the A/C actually makes it idle stable at 800-900 even when its stopped for extended periods which led me to think i just need to up the idler a tad but I don't know how to do it.

Try downloading the Factory Service Manual (FSM) stickied in the thread above. I think its under the electrical section or section F IIRC.
You're probably looking for idle adjustments but its probably worthwhile to check your TPS voltage while you are troubleshooting this. Its pretty easy. Damian has a thread about it in the Advanced Tech section

I found the little screw and turned it clockwise a bit and it seems to be idling better now although I'd like to look into other possible causes. I couldn't find Damian's post, could you link me too it? Also, is there anything else I should check while im looking at things?

I had a simular problem, twice the car had idled up to temp and the boost gauge would show a fluctuation in vac. turned out to be the crossover pipe both times. Check your couplers for leaks.
