FD troubles please help

I want to know if any has the same deal I have a FD with FC power commander and when I drive the car at night after it warms up the WTR-T reads about
80-83 C After I drive it for about fifteen min. I can watch the WTR-Temp go down to as low as 25-30C. I don't know what the problem is after is gets that low the car starts to sputer and spit at about 3500-4500 it idles and runns just like you started it up and took off but after the temp goes back up after you let off the gas once it goes up to 70-80 it fine until you get on it again

2 things. Sounds like your water thermosensor is going bad. I have an extra if you need it. 2nd, did you cut the appropriate wires when you installed the pfc?
