EGT and Water temp Readings help

I’m planning to install an EGT gauge. Can you guys tell me what temperature reading are you getting during idle and full throttle?

Also what is a “normal” water temperature that you are getting from your water temp gauge (aftermarket gauge)? I get readings little below the middle but when I turn the engine off I hear bubbles in the Air Separator Tank.
