Does a Miata Thermosensor work with a PFC ?
yes. . . a local guy has an eclipse sensor in his and hes had pfc for a while. . . shouldnt alter what it does. you dont need the miata sensor if you can get a friend with a datalogit. all they have to do is change the fan temp turn on settings and youre done.

i havent tried it yet on his car, but i assume it will. the sensor still reads a temp. if you set the datalogit to turn the fans on at a certain temp all it is doing is reading what temp the sensor tells it and makes the correction accordingly.

Are you talking about the thermoswitch or the water temp sensor? I think you're talking about the thermoswitch (the one that turns the fans on). I believe it is basically an on/off switch, so it shouldn't matter whether it is from a Miata or not.
As a side note, the Miata thermosensor mod is not necessary with a PFC, since it turns the fans on at 98-99C, as the factory default. You don't even need the datalogit to run much cooler than with the stock ecu.
The thermoswitch does not in any way communicate with the ECU.
The Miata thermoswitch mod is still useful for PFC users, because it will lower the temperature needed to activate the thermoswitch fan relay and turn both the radiator fan speeds up one click. It's a useful fallback measure to help keep the car from overheating. It's even more useful with the Miata thermoswitch.
