As a cleaner, I use Optimum No Rinse. It is a great rinseless wash and can also be used for all purpose cleaning, but I would really need a dedicated interior cleaner or APC for heavier grime.
For protection of the plastics, you'll find a lot of detailers who like 303 Aerospace Protectant, which is what I use:
Of course, as with any detailing, plenty of microfiber towels are essential. I keep a microfiber and a detailing brush in my door panel pocket, which helps keep the interior dust-free.

Godly!! that is sooo clean!! And thanks for taking the time to post the links to those product!!
Is the 303 also good for dash and door panels? (not sure what material are those, rubber?)
Yes, the 303 is specifically for plastics like the dash and door panels. It is a UV protectant and dries to a matte finish for a factory look. It is popular in professional detailing circles.
Going to second the 303 for interiors. Been using it for years and its great, I love that it doesn't leave any sort of shiny finish once you're done. Back to black has worked well for me for any plastics that were heavily faded to bring them back to a good color. Also have enjoyed the eagle edgeless microfibers from theragcompany.
