Coolant mix

Ok, I may be able to finish the car up today, so I'm gonna need to fill up all that coolant I spilled. What is the proper water/anti-freeze mix for central California in the summer? Is there any specific brand of anti-freeze that people on here recommend? And lastly, where can I find the process for 'burping' the coolant? Thank you.

I always used 30/70 when I lived out in LA.
