Do NOT go to DOT 5. IIRC DOT 5 does not mix with DOT 3/4 and will goop up your brake system. DOT 5.1 is compatible with DOT3/4, but there is really no reason to use this. Stick with DOT 4. I use Motul Racing 600 and the newer Motul RBF 600 and I highly recommend them. Very high dry and wet boiling points. I have been to numerous open track events with these. I do replace the fluid quite frequently though whether it really needs it or not, but at ~$12 per it is well worth the peace of mind.

If you use ATE Super Blue (guess what color it is?), which is very good quality DOT 4 brake fluid, used by some German car manufacturers from the factory, you'll know when you've purged all the old brake fluid out of the system. As an added bonus, it doesn't absorb water as easily as some of the racing grade brake fluids and only needs to be changed once every 2 or so years. It's also available in a clear/yellow color so you can swap colors with every change.

Most of the chain stores only carry big brands. I think Valvoline makes a halfway decent synthetic DOT 4 which you'll be able to find. You may be able to find Motul stuff (or order it at least) from a motorcycle shop, and ATE is usually carried at German car dealerships.
