Am I running too cold?

Hey all,
I made myself a fan control unit with ajustable turn on temps. One for low and one for med. The question is: I can ajust my fans so the car runs at 81'C. However, would it be better to run the engine up a bit, say to 85-90'C range? I don't want to run too cold and stay in some kind of warm up mode, or have a constanlty closing thermostat or something. Thanks in adavance.
Ohhh yeah, here are my mods.
93 touring (2k on new motor)
PFC
fluidyne radiator
custom cold air intake
RB exhaust

I'm running pretty cold because I disabled the A/C and have fans only. The temp. needle is always well below middle.

Ideal should be 190F-210F no higher than that,remember stock ECU turns fans on at 230F.I have my fans turning on at 207F off at 188F any lower and fans will be struggling to lower temps.
