My 87 was fine...then all a sudden the temp gage goes HIGH and the FUEL gage goes to FULL when the car is only a quarter full...

All was well an hour before all this happened....gages are gone nuts.. !!!

My car did this 3-5 times when I first bought it, never figured it out.
On cold starts my tach doesn't operate until warmed up, seems related to your issue.

Pull out your cluster and see if there are any broken solder joints.
It's a common issue on old cars.

gauge cluster. there will be a speedo cable clipped into the back of it. it's usually best to unclip it at the transmission to give enough slack to be able to pull the cluster forward enough to get your hands behind it and unclip it. i dunno. that's probably how you should do it. i was able to get my hand in behind there without unclipping it at the trans. tight fit though.
you'll know what i'm talking about when you go to pull it out.

Also check the large ground connector at the driver shock tower near the trailing coil.

My 1987 FC n/a does the same thing as the OP's. I was scared at first because I was just driving into town, not even 2 miles before I saw my temp gauge sky rocket. I pulled over to check it out immediately fearing overheating, but there were no signs of such in the engine bay. Hell it was barely warmed up! In my case the Temp and Fuel gauge shoots past maximum about 3/10 times when cold starting. After the car warms up and gets going for a while they find their positioning to be accurate. So I just kinda let it go and shrugged it off. I figured it was an electronic issue that I don't know how to fix and was not detrimental to the functionality of my FC.
