Wheel sizing question

I was under the assumption that as long as we kept the stock offset (+40mm) then we could get any size wheel. But after doing a quick search it appears not. I would like to get some 18" wheels on my car, I don't know what width somewhere between 8" to 9" I guess. What kind of offset should that be now? Less obviously right?

Here's a calculator you can play around with. Remember the stock 16" wheel is 7" wide and +40mm offset, so you don't want anything that would move the wheel closer to the suspension.

6-JJ/15 Rims on '86 FC

I've looked in the wheel & tire archive, 2nd archive etc., and all that I can find is the reference to the 16" TII rims. I am looking at 17"x8 front & 17"x9" back with Dunlop 901 225/45-17 front & 255/45-17 back. Does anyone know if the offset on my rims is +40mm? Sorry if it's been previously posted, but I've been searching everyday for the last week. Thanks in advance!!!
