What should i Keep?

When i get my exhaust done, 2.25", Should i keep all the goodies on?? Like that cat and reses? And if i do take those out, what do i do with the sensor (or whatever its called) that attaches to the Cat??? Also, whats the best site to get parts from??? As in "good" prices and good variety??? Thanks
