Essentially, porting changing the size and shape of the intake/exhaust ports to make the engine inhale/exhale easier.

Port size is always increased by grinding material away from the surrounding area. For example, intake ports are ground so that they open sooner (move the bottom of the port down) and close later (move the top of the port up). This allows more A/F mixture into the engine by increasing the amount of time the port is open during the intake event, as well as generally increasing the flow.

The exhaust is done in the same way, but you need to be careful about moving the port up lest you create too much overlap with the intake (where the ported "brap brap brap" sound comes from).
