Typical engine operating temperatures?

I did a search on oil temperature and didn't find an answer.

I'm planning on adding an oil temperature gauge and wanted to know what the operating temperature range is for the engine oil? What's too hot?

This is for an 88 N/A.

Around 180-210. 210 is a little on the hot side. Anything over 250 is a problem.
