Safe Oil and Water Temps?(searched)

I'm just curious what a safe range for water and oil temps are in a highly modified TII.
I tried searching, but best i could find is not above halfway on the guage:/
I'd be interested to know the actual safe temps for on a aftermarket guage

Any help would be greatly appreciated.

I have a S5 TII with a Greddy FMIC, koyo rad, with no AC.

My water hangs out around 189F and oil is the same if not higher when I get on it.
