first your bumps have been deleted. Bumps are forbidden here in the 2nd gen technical section.
The reason for the coolant lines is to prevent overheating and coking of the bearings and oil lines.
Running without the coolant lines will result in the bearings failing early on the stock turbo, and will require use of a Turbo timer when using the stock turbo without coolant lines.

No you should definitely NOT run the stock turbo without the coolant lines. Turbos that are designed without water cooling have a lot more oil flowing through them to aid in cooling. A turbo timer with not do jack to help you.

on a watercooled setup, the oil's job is to just lubricate with coolant doing most, if not all the cooling
