The engine and dash harnesses are radically different as are the ECU and other electrical parts.

You would be much much better off sticking to the same series.

I was gonna use the s4 engine harness, and all the sensors. What do i have to do to the dash harness ?

rewire most of it.

You would be better off using the existing S5 engine harness and modifying it and the the engine to work with it.

At least then the harnesses would plug into each other then,
