Rough acceleration, RPM drop

Hi all, I have a 1990 NA convertible.

I bought the car back in May, and have had a few problems since then. I've fixed most of them, but here is the one that has me stumped:

When I accelerate out of a stop or through a turn, the car sputters, check engine light flickers, and my RPMs drop. I barely have any power. Once I reach a normal speed (25mph+) the sputtering stops, check engine light goes away and I get decent power. The car starts and idles fine (an achievement in itself, though the idle is a little low).

Car is completely stock except for an aftermarket radiator, the previous owner had a new crate engine put in 40k miles ago.

Newer O2 sensor (though it is a Bosch universal one - should I start here?) and plugs.

If you suspect its been a while plugs and wires probably wouldn't hurt to do, but I would start by pulling codes if its throwing a CEL.
