Removing sunroof rack but keep sunroof
I've got a plan to remove all the sliders and such for the sunroof BUT i'm stuck with the problem of sealing the sunroof after all this stuff is done.... I want to keep it removable via quick release tabs inside the car or maybe just have it flip up, BUT i cant see a way to seal it up so i dont get water inside my car. Anyone tackle this problem before?

...94% correct.
You're out of luck. Doing this would require braces fabbed up to hold the roof down which would require welding of tabs and mounting points and custom clips and levers. Ultimately worthless. Either keep her as is, or keep her closed.

what about doing it like when they put in glass. That requires an extra seal thats actualy attached to the roof... but i havent had a chance to look at one close up.

Huh? i've seen glass in place of the stock sunroof that opened and slid fully back just like stock... only required a different seal because its flat and the stock sunroof has a lip on the bottom

answering my own problem????
ummm i dont want the sunroof to slide back or anything...
my goal is to get rid of the motor and rack to loose weight while still having a sealed sunroof that can be removed.

You have no idea what you're talking about.
86GXL...as I said...you can't do it easily. You're only bet would be to find another car with something similar to what you want and cut it off and weld it to yours. Thats about the only way you'll get a structureally sound glass removable roof.

There is an aftermarket glass sunroof that replaces the stock one but doesnt slide back anymore. im not sure if its removeable but if it is find out how it works and reproduce it.

I have seen sunroof sliders removed and still usable. Just takes a little bit of fabbing. And a little bit of metal. Not really that hard but still not really worth the effort.

I have the Pacific Glass glass roof and it works just like the stock sunroof as it just replaces the metal roof panel.
If you remove your roof interior panels you will see how the sunroof "tub" mounts to the unibody above the doors. You could easily make some braces that would mount to the same locations and would incorporate the clips/hinges to do an aftermarket style swing up removable sunroof panel.
I would like to remove the tub and mechanism for weight savings. It is ~20-30 lbs. Some Evo models went with an aluminum roof skin to lose 7 lbs and it reduces the roll center of the car some amazing amount (1", 1 1/2"?) because the weight is so high in the car. Imagine 30 Lbs removed!

go to a CRX froums they do it all the time. Basically they take down the headliner and strenghten the roof with little strips of steel, and add tabs to the sunroof so you can lock it down. I am not to sure about how a RX7 is built under the headliner when I took mine out for a new one I didnt even pay attention. Ill see if I can find a pic. A guy in a crx did it around here but hes in marine training. but ill see if i can find the pic on the interweb

NEWS FLASH!!
Dealers can install whatever they want. There are LOTS of cars out there that never came from the factory with a sunroof at all that are still sportin' dealer and shop intalled setups.
No FC EVER came from the factory with a moonroof. That whole "pacific" thing should have clued you in that Mazda didn't do it...

No, they're not stock. If it didn't come from the factory, it's not stock. Dealer installed options are things the dealer adds to make the deal "more appealing" so they can make more money.

A dealer option. Hit up Mark's FAQ stickied at the top of this section and find "moonroof option" listed for ANY FC model...
And Mazda didn't install any of the few moonroofs out there.
