basically all you need to do is (this is all covered in a haynes manual as well):
jack up the car
support it on jack stands
get a cherry picker
disconnect hoses from engine
disconnect harness from ECU (or from engine if you think you can put it back on, just make sure you know where it goes all together)
attach cherry picker
detach tranny (it's usually easier to just pull the tranny along with the engine) mounts
disconect driver side harness from tranny
unbolt motor mounts
begin to pull the engine (this is where having friends comes in)
ps... don't forget to unscrew the oil cooler lines (you should have done that with disconnect the hoses, same with the fuel feed and return lines)
... I think that's about it.
total time to do it if you can do it right all the first time, less than 4 hours.
also make sure not to hit your radiator, or damage your fan. also don't drop the engine on the car too.

In the FAQ's there's a link to the factory service manual. I've been using that while i'm taking my engine out along with the haynes manual and i'm doing just fine. If you need some more help look up Kevin Landers site (http://www.rotaryresurrection.com/) under the "tech" section for "how to remove engine".
IMHO all you really need is the factory service manual. The haynes manual is rather vague on their descriptions and the only reason i'm using it is because I can put it on the fender while i'm working. So if you can print it out you'll be golden.

I think somebody makes a dvd of how to pull a rotary engine. I may be wrong, it's just something I heard. I think you can get one on rebuilding a rotary as well. If this is true...I'd like to get one myself.

Bruce Torrentine had an engine remove/reinstall video but I don't think it's still available. If it is, it's available on the Rotary Aviation site (Google it...).
Here are the Rotary Resurrection links:

I checked rotaryaviation...it looks like he still has them...and on DVD, not VHS.
http://www.rotaryaviation.com/Books_videos.htm
He has one for rebuilding and one for removal (2nd and 3rd gen versions)
I'm going to have to get these.
